Why This Recipe Works

If you have been gluten-free for a while, you know the dinner roll problem. The store-bought ones are dry, crumbly, and taste like sawdust. The frozen ones turn into hockey pucks. And homemade attempts? They often come out flat and dense - more like a rock than a roll.

These gluten free rolls are different. They are soft, fluffy, and buttery, with that pull-apart texture you remember from holiday dinners. The crust is golden, the inside is tender, and they hold together when you split them - no crumbling into a pile of crumbs on your plate.

We tested this recipe with everyday 1:1 gluten-free flour blends from the grocery store. No specialty flours, no bread machine, no advanced skills. If you can stir a batter and roll a ball, you can make these rolls.

They are perfect for Thanksgiving, Sunday dinner, or just a weeknight side. Make a double batch - they freeze beautifully, so you can pull out warm rolls whenever you need them. If you love this recipe, our gluten-free bread loaf uses the same simple technique.

What You Need to Know Before You Start

The most important choice in this recipe is the flour blend. Use a good 1:1 gluten-free all-purpose blend that already contains xanthan gum. That single decision decides whether your rolls are fluffy or flat. King Arthur, Bob's Red Mill, and Cup4Cup all work well here.

Second, this dough is wetter than wheat dough - and that is exactly right. Gluten-free roll dough looks like a thick, glossy batter rather than a kneadable ball. Do not be tempted to add more flour; the moisture is what makes the crumb soft instead of dry.

Third, plan for rise time. This recipe needs about 1½ hours of rising in total, plus 20 minutes in the oven. Most of it is hands-off, so start them while you cook the rest of dinner - they will be ready right when the turkey or roast comes out.
